I know, I know. “New Year, New You.” You’re hitting the gym, you’re cutting back on cals. I totally get it. But we all need a little something sweet sometimes, right? I try to keep sweets out of my house. If they’re not there, I can’t eat them! I’ve been successful over the last few months at not buying Oreos and junk food. But here’s the thing– I can’t deprive myself of the things I love entirely. And it’s OK to reward yourself every so often with a sweet treat! I love baking, but unfortunately, when I make an entire batch of cookies, I end up eating almost an entire batch of cookies. Not good. So, here’s my easy go-to recipe for a big “Panera Bread-style” cookie for one. I scoured Pinterest for the best cookie for one recipe. I read reviews and found the one that looked and sounded the absolute yummiest. Forewarning: It makes a BIG cookie, very similar in size and taste to those at Panera Bread. So if you’re like me, you’ll eat half now and half later (just like I do at Panera Bread)! It takes about five minutes or less to mix and 12-14 minutes to bake (depending on how soft or crunchy you like your cookies)! I like mine soft and gooey, so my bake time was closer to 12 mins.
INGREDIENTS
- 2 TBSP unsalted butter
- 3 TBSP packed light brown sugar
- 1 pinch salt
- 1 tbsp whisked egg
- 1/4 TSP vanilla extract
- 1/3 cup flour
- 1/8 TSP baking soda
- 1/4 cup milk chocolate chips
INSTRUCTIONS

Preheat oven to 350 degrees. Melt unsalted butter in a microwave safe mixing bowl.

Stir melted butter, brown sugar, salt, egg, vanilla, flour, and baking soda. Stir with a spoon until well combined. Let cool. Mix in 3 tablespoons (or less/more) of the chocolate chips. Shape dough into a 3 1/2-inch disk on a baking sheet. You can gently add more chocolate chips randomly over top and sides of cookie.

Bake in preheated oven 12-14 minutes, until cookie is golden. Serve warm. 🙂
