Looking for a quick dessert you can whip up without needing to run to the grocery store? Well, as long as you have a cake mix, eggs, and oil, you’re in luck! My grandmother shared with me her recipe for fudgey, soft, chocolate cookies and I am so happy she did because they’ve been a hit! The cool thing is that you can use ANY type of cake mix, so basically, pick your favorite! Personally, I like the fudge chocolate cake mix & the yellow cake mix. You also can use any kind of icing. I haven’t been to the grocery store so I used some icing leftover from yesterday’s Dunkin’ make-your-own-donut kit and some milk chocolate icing I already had here at my house for today’s batch. I also use Nutella sometimes for icing– which is quite the upgrade. YUM!!! You can put chocolate chips in too!
Recipe
INGREDIENTS
1 cake mix (any type)
2 eggs
1/2 cup of oil
DIRECTIONS
1. Mix all ingredients together by hand or in with mixer until blended and smooth.
2. Spray cookie sheet or foil and place cookies on sheet (about 1 TBSP size).
3. Set oven to 350º and bake for 8 minutes.
4. Apply icing (and sprinkles if you’d like) once cooled.
The cookies will be soft and cakey. 8 minutes seems to be just perfect. I hope you enjoy this recipe as much as we do! Let us know how you like the finish product.
